Leeks , purifying and rich in fiber, aid digestion.

Spinach , a source of iron and antioxidants, boosts energy.

The zucchini , light and hydrating, provides a velvety texture.

Lemon , rich in vitamin C, gives pep and stimulates the elimination of toxins.
The ingredients
For 2 to 3 servings:

2 leeks
-
150 g of fresh spinach

1 zucchini

The juice of half a lemon

Salt, pepper

A drizzle of olive oil

Vegetable broth (enough to cover the vegetables)
The preparation

Fry the sliced leeks in a drizzle of olive oil until they become soft.

Add the chopped zucchini and cook for a few minutes.

Stir in the spinach, then cover with vegetable broth.

Let simmer over low heat for about 20 minutes.

Blend until you get a velvety texture.

Add the lemon juice, adjust the seasoning and serve hot.
